Barbecue Pizza

Whenever I eat pizza I always love to choose combinations that aren't your standard mozzarella with pepperoni. I love crazy combinations including barbecue chicken as one of my favorites.

Ingredients:
Dough (you can buy your favorite store bought dough, or make your own, recipe here.)

2 Whole Chicken Breasts
1/2 cup of your favorite barbecue sauce
2 cups shredded pepperjack or mozarella cheese
1/2 cup thinly sliced red onion
1/3 of tomato, chopped in cubes
Preheat oven to 375 degrees.

Salt chicken breasts on both sides, then place in an ovenproof dish. Pour BBQ sauce over the breasts and turn them over to coat. Bake for 20 to 25 minutes, or until chicken is done. Remove from oven and cut into a fine dice. Set aside.

Increase your oven temperature to 500 degrees *

Roll out your pizza dough, poke small holes in dough with fork. (If you are not using a pizza stone, I like to put the dough in the oven for about 3-5 minutes to cook it slightly)

Spread a thin layer of BBQ sauce over the pizza dough. Top with the cheese, then chicken, and onion slices.

Bake in the oven for about 15 minutes or until dough has brown and cheese is bubbling.

Remove from oven and sprinkle with fresh cilantro and serve.
